Chorizo Breakfast Rolls

If the picture doesn't intrigue you enough just wait until you read how easy, versatile, and delicious these are to make. This month's recipe highlight is actually from someone local. A Folsamite woman who was diagnosed with Polycystic Ovary Syndrome (PCOS) recently and has dedicated her time and effort in developing some deliciously healthy recipes that are not only easy to make but budget friendly. 12 eggs
2 cups spinach
1 can organic refried beans
1 lb ground turkey chorizo (Nugget or Whole Foods)


In a blender, blend 12 eggs with 2 cups of spinach. Pour on parchment paper and bake 400 for 12 minutes.

Once finished baking, spread one can of organic refried beans and one pound of cooked turkey chorizo and sprinkle with cilantro.

Slice into 8 squares and roll into foil! Reheat for 1min 30 secs for quick morning fuel.
